CHICAGO — Ecodos, a new gelato technology, was officially unveiled at the National Restaurant Association show in Chicago in May. The system will produce gelato automatically from fresh ingredients in 10 minutes.
The process includes automatic weighing of the products, mixing, cooking and transferring to the batch freezer. Ecodos also employs an automatic cleaning sequence that includes the batch freezer.
According to the company, the new system can produce high-quality gelato in 10 minutes, reducing cost and eliminating the need for large-capacity freezers. There also is no waste as the system can reconstitute gelato left at the end of the day into fresh gelato the next day, the company says.
Ecodos is produced in Italy by Color Service SrL and is distributed in North America by Charlotte, N.C.-based GTS I.
