Rochester, N.Y.-based Mark's Pizzeria, which includes more than 40 locations in New York and Florida, has added a gluten-free option to the menu.

The new pizza was added in response to the increased diagnosis rate across the country of celiac disease and people who suffer from gluten sensitivity. Mark Crane, president of Mark's Pizzeria, said that the decision to add the option was easy, seeing that a strict gluten-free diet is the only known treatment for the condition.

"We're really excited to be able to offer a gluten-free pizza to our customers," Crane said. "For some families affected by celiac disease who live in the neighborhoods we operate in, a pizza night was out of the question due to the fact that there are few pizza restaurant or delivery options that offer gluten-free ... If by adding gluten-free pizza, we make just one family happy, that's worth it for us."

After months of product testing and official certification to ensure proper delivery of certified gluten-free pizza dough, Mark's Pizzeria launched gluten-free pizza Sept. 3.
