Grimaldi's Pizzeria, in the middle of an aggressive expansion plan, has opened its newest location in the Fashion Show Mall on the Las Vegas Boulevard.

Open for lunch and dinner, the restaurant is the fifth Grimaldi's to open in Nevada. The company also operates more than 20 restaurants in Texas, Arizona, New York and Florida.

Grimaldi's is best known for its handcrafted coal-fired oven that heats up to 1,200 degrees. The company also hires a chemist to analyze and recreate the mineral content and exact composition of the water in each location to ensure the dough tastes the same as its signature location in Brooklyn.
