Detroit Style Pizza Co. has introduced a new gluten-free pizza, created for customers with celiac disease and gluten sensitivity. The pizzas are available at the two Detroit Style Pizza Co. locations and nationwide via mail order.
World Champion Pizza Maker Shawn Randazzo was inspired to craft the recipe after his wife, Keri, was diagnosed with celiac disease in January 2012.
The couple tried gluten-free pizzas at dozens of Detroit-area locations, but wasn't satisfied with any of the options, so Randazzo decided to make his own version.
"Most of the gluten-free pizzas we tried were made with the frozen pizza crust shells sold in bulk by vendors. They have super-thin crusts that are dry and bland, like eating crackers. They make your teeth squeak. Worst of all, they're practically flavorless," Randazzo said. "I wanted to create a gluten-free pizza recipe that we loved and would be proud to share with others."
Detroit Style Pizza Co. offers two styles of gluten-free pizzas: small Detroit Style Square (four pieces) and small Pan Style Round (six pieces). The pizzas are available for $6.99 plus toppings. Specialty pizzas can be made gluten-free by adding $2 to their regular prices.
Any Detroit Style Pizza Co. mail order pizza package can be made gluten-free for an additional $6 and shipped to anywhere in the continental U.S. Gluten-free cheese breadsticks are also available for $5.99.
The Detroit Style Pizza Co. kitchen is specially designed for gluten-free prep: gluten-free menu items never come in contact with surfaces or utensils used to prepare foods that contain gluten.
"A gluten-free diet calls for no breads or wheat. It's a total life change for many people, and it's extremely difficult to find gluten-free bread products that taste great," said Randazzo. "For people who love pizza but can't eat gluten, being able to enjoy a gluten-free pizza that's packed with flavor is a treasure."
