Mellow Mushroom Pizza Bakers is set to open in the Middletown area of Louisville, Ky., on Aug. 27.
To celebrate the opening of this Mellow, at 10:30 a.m., Aug. 27, the city will host a ribbon cutting ceremony with owners David and Dana Sims.
"Both of us being born and raised in Louisville, we knew from the first time we experienced Mellow Mushroom that we wanted to bring it to our city. We feel blessed that we found a great location within our own community and are excited to be able to share Mellow with our hometown," David Sims said.
The restaurant's artwork is inspired the city of Louisville, with two upside down mirror ball Spires and seven spinning "Trophy Stars" made from a collection of horse trophies. Louisville plays host to the Kentucky Derby, with a backdrop of Churchill Downs' Twin Spires, and was also the birthplace of the disco ball.
This location includes 250-plus seats inside, a patio and 24 seats around the bar featuring 36 craft beers on draft and 45 bottles.
It will operate seven days a week Monday-Thursday, 11 a.m. to 11 p.m.; Friday and Saturday, 11 a.m. to 12 a.m.; and Sundays from 11 a.m. to 9 p.m.
Additionally, Mellow Mushroom will open in Louisville's St. Matthews area Sept. 3, under owners Jason Nase and Damon Coates.
"The St. Matthews area is a great fit for Mellow Mushroom. It has a great history, charm and well-established neighborhood feel, while still being a part of a big city," Nase said.
The St. Matthews' location is in an older neighborhood of Louisville, allowing the owners to tap into the history of the region. Antique items and hand-carved wooden statues are on display in the large rollup windows. Inside are reinvented antiques and found objects that have been repurposed. Reclaimed wood from the original building can be found on the floor and ceiling joist, and metal sculpture dragon flies with illuminated Edison bulb tails guide guests to the bar.
This Mellow also has 250-plus seats and includes a party room for up to 35 people, a patio and garage doors that open. This location also features a full service bar and a Mellow Mushroom Beer club with 40 drafts and members-only rewards. It will be open seven days a week Monday- Sunday, starting at 11 a.m.
