Cosimo's Restaurant Group, a Hudson Valley, N.Y.-based restaurant group, will celebrate the grand opening of The Pizza Shop at the Village Shoppes in Fishkill, N.Y., on Dec. 4.

The first The Pizza Shop opened two years ago in Newburgh, N.Y. That unit's success has driven an expansion plan that includes a goal of opening more locations throughout the valley within the next couple of years.

The Pizza Shop offers artisan-quality pizzas, a thin-crust, Crispina-style pan pizza, daily entrée specials, pizza rolls, sandwiches, pastas, salads and desserts. A coffee bar is also available.
