When it comes to ovens, it's all about speed of service, energy management and ease of operation, Dave Brewer, COO of Cooking Solutions for The Middleby Corporation, said in an interview at last week's Fast Casual Executive Summit in New Orleans.
"The oven is the engine of the kitchen," he said. "It's going to be with you a long time. It's going to outlast 90 percent of your employees.... So, it's really key to pick the right cooking technology that matches your concept, your brand, your menu," he said.
