MANHATTAN, Kan. — The American Institute of Baking will host its annual Practical Pizza Production Technology seminar Oct. 10-14, 2005.
The intensive, week-long seminar will be led by instructor Tom Lehmann, known industry-wide as "The Dough Doctor," AIB instructor Jeff Zeak, and restaurateur Evelyne Slomon, author of "The Pizza Book: Everything There is to Know about the World's Greatest Pie." Nearly a dozen other industry experts will be on hand to assist as well.
Topics covered in the seminar include dough recipe formulation, production methods, ingredient functions, discussion of various sauces and cheeses, current pizza industry trends and how to generate more income from your present pizzeria.
