NORWICH, Conn. -- Engine No. 6 Pizza Co. has introduced gluten-free pizza, calzones, pasta and bread sticks to its menu, the company announced.
The move was an effort to cater to requests from customers suffering from celiac disease. People with celiac disease cannot tolerate certain proteins found in common cereal grains, including wheat, barley and rye, commonly referred to as gluten. A person with celiac disease, left untreated, can develop life-threatening nutritional and immune-related conditions.
Gluten-free products now account for 5 to 10 percent of pizza sales at the restaurant.
