Fitness Pizza & Pasta details nutritional info on menu

YORBA LINDA, Calif. -- A health-focused pizzeria here is taking what some may view as the daring step of printing on its menu the nutritional content of all its pizzas.

According to the Orange County Register, the menu at Fitness Pizza & Pasta lists each pizza's protein, carbohydrate, calorie and saturated fat content.

For more than a decade, federal regulations have mandated restaurant operators be able to provide full nutritional disclosure of all their food products when customers request it. But, as the report pointed out, putting such information right on the menu is unique.

The pizzeria, which, according to the report, serves California-style pizzas, also adds whole-wheat flour to its dough recipe.

Compared to white flour, whole-wheat is lower in carbohydrates, and viewed by some as more healthful. But according to the American Institute of Baking, when whole-wheat flour makes up more than 30 percent of the total flour content in a dough recipe, the baked crust can become brittle.
