Nation's Restaurant News: Flatbread Company will open its first Greater Boston restaurant in Bedford this month, bringing with it a commitment to local and organic food and a desire to reconnect customers with nature. "We're driven a lot by the environment and by using mostly organic ingredients, so that keeps the air, water and soil clean," said co-owner Jay Gould.
The 150-seat Flatbread Company features a 20-ton, wood-fired oven made from Boston Blue Clay.
