Pay what you want at Fort Worth pizzeria

Is on-demand pricing the way of the future? Some Dallas-area restaurateurs believe it is -- or, at least, the way of now. Owners Lee and Emma Herdman of The Original Joe's Pasta n Pizza allow customers to order an Italian pie or fettucini al fredo with shrimp -- usually $2.25 a slice and $11.95, respectively -- and pay only what they want on Wednesdays, according to the Fort Worth Star-Telegram. The Herdmans say the initiative has added about 60 patrons during specials nights.
 
From the Star-Telegram:
'We have great faith in our customers and we wanted to do something that was affordable for everyone,' Lee said. 'People told us they would like to eat out during the week but wanted something affordable.'
 
The Herdmans also offer patrons free wine and beer every day. Or you can bring your own, especially if you don't care for Keystone lager.
