Celiac disease sufferers can enjoy gluten-free pizza at Manny B's

BETHLEHM, Pa. — Celiac disease sufferers in the Lehigh Valley now can eat gluten-free pizza at Manny B's Pizza Restaurant.

According to a news release, celiac disease is a genetic disorder in which the small intestine can't break down gluten found in some grain products. Those with the disease who ingest gluten can suffer allergic reactions that, left untreated, can result in malnutrition, weight loss, diarrhea and nutrient deficiencies. The ailment affects 1 in 133 Americans.

At Manny B's, great pains are taken to ensure gluten-free products do not come in contact with any wheat flour. The innovative dough is cooked in separately designated pans, sauce and cheese are stored in a separate cooler, and pizza cutters are washed and sanitized before cutting the gluten-free pizza.

A complete gluten-free menu will be available Oct. 1.
