Chicago chef joins Figaro's

SALEM, Ore. — Figaro's Pizza has named Chicago chef Dave Schy as director of new concepts and product development for the 100-unit chain.
Schy graduated from the Culinary Institute of America following an apprenticeship with chef Jean Banchet at Le Francais in Chicago. After a stint in Los Angeles, Schy spent seven years as the corporate chef for Chicago-based Lettuce Entertain You Enterprises and nine years running his own restaurant, Hubbard Street Grill.
