Cousin Vinny’s adding two more outlets

Ohio-based Cousin Vinny’s Pizza has opened the first of two new units in the Springfield area behind the efforts of business partners Rick Allen and Mo Rashad.

The duo plans to open at least six more units by the end of 2011 in the Miami Valley area, according to the Springfield News Sun. If this goal is achieved, it will boost the chain’s presence to 16 units.

The latest opening, about a half hour from Cousin Vinny’s hometown of Dayton, Ohio, has doubled expectations.

Cousin Vinny’s is the brainchild of Rashad and was founded eight years ago. He was eventually joined by Allen and the pair opened seven Dayton-area restaurants within two years.

The six locations planned for 2011 include Middletown, Xenia, Troy/Tipp City, Englewood, Franklin-Carlisle and Springfield’s second location, with a goal of opening 10 by the end of the year.

Cousin Vinny’s business model entails a contemporary design, free delivery within a 3- to 5-mile radius and its signature “Big 10” deal, which includes pizza bread, sticks and two fountain drinks for $10.99.
