BRISBANE, Australia—On Nov. 26, Domino's Pizza Australia (DPA) announced it will begin using a mozzarella cheese with 50 percent less fat at all of its 260 stores.
According to a news release, the new cheese will be called Domino's Delight Mozzarella and has all the taste, texture and stretch of regular mozzarella.
According to DPA CEO Don Meij, the new cheese reduces the overall fat of a Domino's pizza by 35 percent. Getting the desired product, he said, took more than three years of research and development.
"Producers have previously found it difficult to make a low-fat mozzarella while maintaining the cheese's distinctive taste and stretch," Meij said in the release. "We tested Domino's Delight Mozzarella on panels of cheese and pizza experts and they couldn't tell the difference. ... We expect to sell at least seven million pizzas in the next 12 months topped with Delight Mozzarella."
According to a separate news release, an unnamed but natural starch is used to replace the fat that gives mozzarella its distinctive taste and texture. The reduced-fat cheese will be shredded rather than diced like the full-fat cheese.

Meij said Domino's decided against creating a special low-fat menu or simply reducing the amount of cheese on its pizzas to meet increasing customer dietary concerns.
"Our consumer research shows that pizza lovers don't want us to take away their treat. They want to eat the real thing," he said.
