LYNDEN, Wash. -- Dairy analyst Jerry Dryer believes cheese market prices could move higher now that demand is increasing slightly.
According to a report on Dairyline.com, Dryer, editor of Dairy & Food Market Analyst, said activity in the 500-pound barrel market reflects retail sales increases relative to the arrival of the outdoor grilling season. Commercial sales are improving, too, he said, pointing to a rise in sales of shredded cheese.
Overall, Dryer said retail sales were up about 4 percent through the first three months of 2003.
In the report Dryer said cheese and butter inventories remain excessive, but that backlogs are being trimmed by government purchases and conversion of product to process cheese.
