Eureka Pizza wins competition with PB&J wings

FAYETTEVILLE, Ark. — Eureka Pizza won the "Most Exotic" category at Northwest Arkansas Mall's "Wing Fest 2007" Father's Day competition. The winning item was Eureka's peanut butter and jelly-flavored chicken wings. 
 
Eureka Pizza owner Rolf Wilkin said he had a specific strategy to win the exotic prize.
 
"We figured that the 2 other prizes - Best Overall and Hottest - would go to a Chicken Wing Restaurant, Wilkin said. "We decided to make our play for most exotic."
 
The PB&J wing is oven-baked, not deep-fried, Wilkin said. The peanut butter is a Spicy Thai Peanut sauce, and the jelly component is a glaze made with grape jelly and yellow mustard, brushed on the wing after baking.
 
The key is to heat the mixture so that the jelly "breaks" and the jelly and mustard combine smoothly together, he said.
 
Eureka Pizza also scored points with Sweet Thai Chili wings with a West Indian Lime Aioli. Eureka Pizza simply glazed their baked chicken wing with the off-the-shelf Thai Sweet Chili Sauce.
 
The dipping sauce was an aioli made with mayonnaise, lime juice, granulated garlic and fresh ground black pepper.
 
Wing Fest was sponsored by the Cumulus Radio Group and raised money for the Alzheimer's Association.
