Great Northern hopes to take fast-casual pizza concept national

Rochester (N.Y.) Democrat and Chronicle: The "fast casual" restaurant concept has been successful for sandwich and bread chains such as Panera Bread Co. and five partners are planning to see if it can it work for pizza.

"Great Northern fits a niche in the fast-casual category," said Ken Greene, one of the partners planning a national expansion for the four-store Great Northern Pizza chain. "It's an underdeveloped market. You don't think of a comfortable, casual environment where you can get a slice of gourmet pizza."
