New Washington DC concept plans carbless pizza

Rhode Island Row in Washington, D.C., has signed an agreement with Mark Bergami, from Maryland's Haven Pizzeria, to open a new artisan pizza concept in the development.

His new restaurant, Bergami's, is set to open in the spring.

This marks Bergami's first restaurant ownership. Prior, he was involved with Haven Pizzeria in Bethesda, Md., which earned acclaim from the Washington Post for its New Haven-style pies.

Bergami's will let customers choose their crust, sauce and toppings, then watch their artisan pizza bake in a 90-second oven. Bergami's will also serve natural sugar sodas, craft beers, wines and made-to-order coffee drinks.

Bergami said the new restaurant will offer a "carbless pizza" featuring a crust made of cauliflower.

"My wife was the biggest critic of the idea before trying it, but now she absolutely loves it," he said.
