Go Roma, located in the Chicago area, is an Italian fast casual restaurant that has been around since 2004. Its menu is loaded with gluten-free options. Jeff Drake, co-founder and president of Go Roma, said the company has always had some gluten-free items, such as pasta sauces, soups and salads. But by simply labeling them on the menu, demand for those items rose significantly. After this menu change, Go Roma sent out email alerts and contacted celiac disease support groups, which yielded growing sales. With positive reviews, a rapidly growing fast casual segment and an increase in sales, Go Roma is planning on expanding across the nation.
