Garlic Jim's Famous Gourmet Pizza operates more than 25 restaurants in the Northwest, with most located in the Puget Sound area of Washington. Garlic Jim's offers a range of traditional and unique toppings, including co­conut as a twist on the usual Hawaiian pizza, roasted corn, tortilla chips, chipotle sauce and cashews. The company introduced glu­ten-free pizza in 2008, initially rolling it out in the Portland/Vancouver, Wash., metro area. Garlic Jim's was the first pizza chain to be ac­credited for gluten-free food service by the Gluten Intolerance Group of North America.
