Red Brick Pizza expanding throughout Phoenix

Arizona Republic: California-based RedBrick Pizza will soon grow its metro Phoenix presence by opening three East Valley locations.

The stores will debut in Gilbert and Chandler in May or June, said JJ Bhakta, operations director for RBP Investment Group of Arizona, RedBrick's master developer in Maricopa County.

The fast-casual restaurants serve fire-roasted pizzas that are cooked in three minutes in a hearth, as well as chopped salads and gelato ice cream.

RedBrick has big growth plans. The corporate office's executives hope to eventually have 12,000 locations, giving it a presence that Bhakta compared with Starbucks and Subway. There are RedBricks in Arizona, California, North Carolina and Texas.

As far as the East Valley locations are concerned, Bhakta said he's not expecting instant success.

"We want to capture markets and build a good, strong customer base with loyal customers," he said. "We understand it's not going to come overnight, but this is definitely something that in the coming years is going to turn heads."
