RedBrick Pizza plans debut in four states

RedBrick Pizza announced plans expand by more than 50 locations in four states throughout the next three years.

The first five locations showcasing the chain's signature open-flame brick oven as well as two new restaurant designs are scheduled to open in time for holiday shopping in Oakbrook Center in Chicago; Mall St. Matthews in Louisville, Kentucky; Northpark Mall in Joplin, Missouri; South County Center in St. Louis; and Oakview Mall in Omaha, Nebraska.

The announcement comes after BRIX Holdings LLC acquired RedBrick Pizza in fall 2013 with plans to update the store design, invest in operations, marketing, and support, and expand the concept through franchising across the country.

The five newest RedBrick Pizza locations initially will be corporate-owned, but will be available for sale to franchise prospects with restaurant experience who are interested in opening future outlets, the company said in a news release.  RedBrick Pizza currently operates 13 franchised locations primarily in California and Florida.

RedBrick Pizza with gluten-free pizza options, the freshest ingredients and no butter in the house is poised to become a fan favorite in each market,” Brix Holdings CEO Joe Vitrano said in the release.
