Russo’s Restaurants hitting growth goals at $1.1M AUVs

Russo's Restaurants, which includes Russo's New York Pizzeria and Russo's Coal-Fired Italian Kitchen, announced plans to continue expanding worldwide after surpassing the 40-unit mark in the US. The restaurant has also announced an 8-percent increase in systemwide revenue.

This year, Russo's opened its first Hawaii location in Ewa Beach. An additional two to five restaurants are planned to open during the remainder of the year throughout Dallas, Houston, San Antonio and Austin. Additionally, there are 28 in development in the United Arab Emirates. Two of those are set to open at the start of 2015.

"We have carefully selected our U.S. growth markets and international regions such as the UAE, Philippines and China for continued growth," CEO and Chef Anthony Russo said in a news release. "Russo's Restaurants can be found in many major cities across the United States, and we are excited to expand our footprint even further."

He added that the average sales volume per unit is $1.1 million. The most recent Russo's opening saw a weekly sales income between $35,000 to $60,000, with food costs accounting for about 22 percent.
