New Haven, Connecticut-based Sally's Apizza is opening several locations starting with its second unit in Stamford opening this summer inside a 4,000-plus-square-foot space. It will include a dedicated fulfillment area for pickup, take-out and delivery, a full bar and art and memorabilia from the 1938-born brand's history.
It has spent years ensuring that it could reproduce its pies so famous in New Haven at other stores. A major part was engineering and building custom pizza ovens that are brick-for-brick identical to the historic coal-fired 'magic oven' at Wooster Street in New Haven. Another essential factor is keeping the authentic original recipe, according to Bob Consiglio, whose father, Salvatore "Sally" Consiglio, founded the brand.
"Sally's is committed to using the same ingredients, recipes and techniques that my father (Sal Consiglio) developed in New Haven decades ago," said Bob Consiglio, who is helping Sally's with the new locations.
Consiglio's brother, Rick added, "I am happy to see my father's legacy carrying on and being made available to more people. I plan on making the rounds at the new locations, with an eye toward seeing the same quality product coming out of these incredible ovens."
The store's design was inspired by Sal Consiglio's drive and passion for serving great food, the release said. The brand is working with property developers to bring the brand to locations throughout the Northeast U.S.
