FastCasual editor Cherryh Cansler chats with catering guru Erle Dardick about the $124 billion catering industry and how technology is only part of a restaurant's successful catering strategy. He and Cansler also dive into some content they'll feature at The Restaurant Catering Workshop, Oct. 15-16, 2024, immediately following the conclusion of the Fast Casual Executive Summit, at the Sheraton Denver Downtown Hotel in Denver.

"I want to encourage everybody to invest in catering," Dardick said during the interview. "I want the online ordering companies to invest, but saying that, I also want them to tell the truth, so there's this combination between, 'What is marketing? What is real?' And I would encourage the online ordering companies that are listening to this podcast to invest in catering, but they have to define it, 'What is catering in that environment?'... I believe that the restaurant technology providers at the order management level that are gonna win are the ones that can offer takeout and catering in the same solution. The race is on!"
