One of the biggest changes to affect the restaurant segment during the pandemic was the widespread adoption of food delivery. Nearly 112 million Americans used a food delivery service in 2020, propelling the value of the online delivery market to $26.5 billion that year.
To take advantage of the growing delivery segment while at the same time maximizing kitchen space, many restaurants have begun operating virtual brands, also known as ghost kitchens. Numbers vary, but one study projects that the size of the ghost kitchen market in the United States will grow to $365 billion by 2030, up from $35 billion in 2018. That's a whopping 20% compound annual growth rate for the period.
