Cryogenic pizza? Why not, says Naples pie-maker

Cryogenics has long since promised the prospect of a second life in both science fiction and some well-publicized experimental treatments that a few brave souls have gone into the deep freeze for. Now though, a Naples, Italy pie maker is using cryogenics to give those in this life something that's hard to beat — true Naples, Italy-made pizza.

Calling their pies the "sleeping pizzas," Talia di Napoli in Naples said its pies are preserved for home consumption through the extremely cold temperatures of cryogenics right as they emerge, fresh-baked from wood ovens in Europe, according to a news release. The frosty sleep allows them to be shipped for home "awakening" in kitchen ovens in as little as 48 hours after they are put to their frosty sleep and shipped to purchasers in 38 U.S. states.

The brand debuted in the U.S. in March, but just this week has expanded to bring a little bit of Naples, Italy to the heart of the Bluegrass, with Tilia di Napoli's debut in the commonwealth of Kentucky. 

Each Talia pizza is artisanally handmade in Naples, Italy, by Master Pizzaiuoli using all-natural ingredients sourced from small local producers in Campania, including 00 flour and mother yeast that's left to ferment for 24 hours. 

The company said that while the pies are "still steaming from the wood-fired ovens," they are flash-frozen to take the pie temperature from 200 degrees to -4 degrees Fahrenheit, sealing in the fresh-baked flavor and allowing the pies to remain free of preservatives. 

These frozen sleepers are then "woken up" in home ovens in 10 minutes. Pies included for purchase are Margherita, Bianca, Primavera, Friariella, Four Cheese, Tartufina and Gluten-Free Margherita. They can be ordered online at the company's website for free delivery from Naples in 48 hours to the U.S. states where they are currently available, starting at $11.99 per pie.
