UPDATE: Cheese prices soar 12 cents in one week—then plunge

LOUISVILLE, Ky. — After languishing for weeks in the $1.20-per pound range, prices for block cheese traded at the Chicago Mercantile Exchange is on the increase. In the past week, prices jumped 12 cents to trade at $1.37 on Nov. 2.
 
But as trading resumed on Nov. 3, prices plunged more than a nickel to close at $1.31. Offers left on the trading board could signal additional declines.
 
The most current forecasts don't point to a significant short-term price run-up, and based on those predictions, the recent volatility may have surprised some market watchers. According to published reports, current demand for cheese is stronger than expected and is pushing prices higher.
