Vapiano gets a Scottish brogue

Vapiano has opened its fifth restaurant in the United Kingdom, this one in the Scottish capitol city of Edinburgh, according to Vapiano Executive Board Member and CEO Mario C. Bauer. 

The new location stands right in the shadow of the World Heritage site of the Edinburgh Castle, off St. Andrew’s Square. The expansive design features seating for 240 diners, as well as pizza, salad and take-out stations. The Scottish location also has five pasta stations, along with a glassed-in area where diners can see their pasta and fresh dolci being created. 

In fact, the entire restaurant is fronted by floor-to-ceiling glass for views of the city, while inside there’s also a long bar that features a back-lit scene of Edinburgh sister city, Florence, Italy. 

Bauer said the restaurant had a well-attended launch party and has served nearly 2,000 guests in the first three days of business alone.
