Millennials have gotten a lot of press in the last few years. Some good, some bad, but as menu developers, we know one fact to be true: They are a necessary consideration point for future development and growth. After all, they will make up 40 percent of the country's population over the next few years.
The key word is authentic — in life experiences and in dining experiences. But, what does this mean to you?
A few things. First, keep in mind that the drivers of this generation continue to be emotional. Atmosphere, experience, authentic, real, community and local are all buzzwords tied to and spoken by this group. However, at the heart of it all remains one key component: Flavor.
