Firecrust Neapolitan jumps into fast casual pizza space
Firecrust Neapolitan Pizzeria has opened its first restaurant in Dallas, and has begun construction on its second location in Plano, Texas.
According to a news release, Firecrust is a fast casual Neapolitan pizza concept with its head office based in Dallas. Customers create their own pizzas by choosing ingredients along a "granite pizza line."
To stick to the Neapolitan definition, Firecrust uses fresh mozzarella cheese and tomato sauce using San Marzano tomatoes from the Italian region of Campania. The dough is made using Caputo-type "00" flour. Pizzas are cooked in a wood-burning oven at 900 degrees for about 90 seconds.
The menu also includes four salads and two dessert pizzas.
The concept was founded by Scott Bender. The manager is Vera Pizza Napoletana-certified Tony Alba.
The Plano restaurant is expected to open in October.
