New report analyzes U.S. cheese market

The report covers the main categories of cheese, including whole and shredded natural cheese, American and other processed cheese, cream cheese, ricotta cheese, cottage cheese, aerosol or squeezable cheese, and refrigerated and shelf-stable grated cheese. The topics covered are mostly dairy cheese, but include, where possible, other types such as goat cheese. Imitation cheese is included as part of processed cheese.
Excluded from this report are yogurt cheese, cheese sauces and cheese dips. Sales to the foodservice, restaurants and fast food establishments or to food manufacturers are also excluded.
