Former Panera executive assumes Pieology COO role

Pieology Pizzeria announced that industry veteran and former Panera Bread executive, Clay Sanger, is joining the company as chief operating officer. The 30-year veteran of the restaurant industry will oversee both company and franchise operations, including franchise development, real estate, training, ops support, store design and construction. Sanger previously served as regional vice president of operations for Panera and its company-owned Paradise Bakery and Café concept, according to a news release.   

"We are thrilled to add an industry veteran of Clay's caliber to our talented leadership team as we continue our nationwide expansion," said Carl Chang, Pieology founder and CEO, in a news release. "We are committed to setting every member of the Pieology family up for success and we're confident Clay will help to add a new level of operational efficiency to the growing Pieology organization."

At Pieology, Sanger is responsible for developing operations processes, structuring well-balanced teams, and coaching personnel to help them achieve goals, according to the release.
