Burke gives Mediterranean twist to NaturaSelect pizza toppings line

NEVADA, Iowa — Burke Corp., an industry-leading provider of fully cooked meat toppings and fillings, is introducing its Mediterranean Pizza Naturale recipe featuring the use of four fully cooked natural meat toppings sold under Burke's NaturaSelect brand.
According to a news release, NaturaSelect products are made from premium-quality, natural, fresh pork and beef and are minimally processed without artificial ingredients. Burke's NaturaSelect natural line consists of four fully cooked meat toppings: Italian sausage, seasoned ground beef, sliced Canadian-style bacon and pepperoni.
"Burke Corporation is pleased to offer restaurant operators high-quality, natural meat alternatives to satisfy customers' increasing demand for a natural choice when dining out," said Liz Hertz, Burke marketing manager. "Our Mediterranean Pizza Naturale recipe is a great way for operators to introduce a natural menu option at a premium price point and yield greater revenues."
According to the Natural Marketing Institute (NMI), in 2004, about two-thirds of consumers regularly used natural foods and 40 percent used organic foods. Additionally, NMI reported consumers showed an 88 percent increase from 2002 to 2005 in their willingness to pay a premium price for organic foods and beverages.
Animals raised for NatraSelect products receive no antibiotics and only natural feeds. Additionally, the beef is raised without growth hormones, and no nitrites or nitrates are added to the Canadian-style bacon or pepperoni. All products in this new line are fully cooked to reduce labor and training costs and quick-frozen to maintain freshness and shelf life.

Mediterranean Pizza Naturale
Yields 1 14-inch pizza
  • 1, 14-inch whole-wheat crust
  • 8 ounces pizza sauce
  • 2 ounces NaturaSelect Natural Italian Sausage, 80016, thawed
  • 2 ounces NaturaSelect Natural Beef Topping, 80029, thawed
  • 10 slices NaturaSelect Natural Sliced Pepperoni, 80064, thawed
  • 10 slices NaturaSelect Natural Sliced Canadian-Style Bacon, 80032, thawed
  • 10 ounces mozzarella cheese, shredded
  • Mediterranean Topping Options (choose 2-3): Fresh or sun-dried tomatoes, grilled eggplant, grilled zucchini, roasted red peppers, capers, sautéed spinach, feta cheese, fresh or roasted garlic, artichokes, goat cheese, shiitake mushrooms, caramelized onions, fresh rosemary and black or green olives.
Spread sauce evenly over pizza shell, up to ½ inch of edge. Evenly distribute sausage, beef, pepperoni and Canadian-style bacon over sauce. Add Mediterranean toppings. Sprinkle mozzarella cheese evenly over pizza. Bake in preheated 450 F conventional or pizza oven for 12 to 18 minutes or until crust is golden and cheese is bubbly and beginning to brown.
