Seasoned independent restaurateur Jon Walker is expanding his culinary portfolio by opening a Mellow Mushroom franchise in Danville, Virginia, capitalizing on the brand's robust corporate support system and a strategic location near a high-traffic casino.

When seasoned independent restaurateur Jon Walker sent a casual inquiry through Mellow Mushroom's website, he certainly didn't expect a callback from the vice president of franchising just five minutes later. But for the Danville, Virginia, entrepreneur — the driving force behind highly successful local independent concepts River District Social and Walker's Roadside Grill — that rapid-fire connection sparked the blueprint for his third major venture.
Walker's Mellow Mushroom restaurant is expected to open Sept. 14.

Walker said he has two "very fun and exciting" successfully owned independent restaurants in Danville, but he lives in a small town that has a handful of big chains that seem to do well. There's brand power to a franchise, he believes, and he was attracted to the structure of the business. Walker and his wife, Meredith, were fans of Mellow Mushroom, and did a lot of research into the brand's sales, food costs and support systems.
That random email he popped off to Mellow Mushroom about becoming a franchisee resulted in an immediately returned phone call from Jamie Cecil, who serves as Mellow Mushroom's vice president of franchise development. Walker and Cecil talked for 45 minutes, and Walker said after that phone call, he knew becoming a franchisee was an "awesome opportunity," he said in a phone interview with Pizza Marketplace.
That was August of last year. Cecil flew to Danville, and he and the Walkers looked at some properties. Meredith, ever the prepared former teacher, pulled out a notepad with many questions, and the Walkers peppered Cecil with them for three hours.
It was a perfect match, it seemed, and the Walkers soon flew to Atlanta for a Mellow Mushroom Discovery Day. The brand gave the Walkers the go-ahead to start the franchising process.
They chose an older existing restaurant to do a complete remodel, digging down to the studs and adding 500 square feet.
Mellow Mushroom is known for its eclectic, psychedelic and highly distinct brand identity. The Walkers own a family-friendly sports bar and a county diner in town. Mellow Mushroom, with its bright colors, local murals, music and fun vibes, would be a welcome addition to Danville. The town doesn't have anything like it, Walker said, nothing even close.
Mellow Mushroom, focusing solely on its specialty pizzas, is needed.
"Speaking on the business terms, pizza's pizza — it does have great margins," Walker said. "Mellow's done a great job of explaining all the business side to us — how franchisees can do well with their company as long as you follow the portion guidelines and you build everything how they want you to build it from a from a pizza standpoint, building all your dishes with the products or the recipes. We think Mellow's going to do great here."
A boon? The Mellow Mushroom will be located just two miles from Caesars Virginia, a casino that draws in more than 2.5 million visitors a year. That's a massive traffic play, and it influenced the Walkers' site selection. That casino does have its own dining options, but with that amount of people, they can't all eat in Caesars, Walker said, adding that guests can see his Mellow Mushroom site from the casino and vice versa.
The 4,400-square-foot pizzeria also sits near major retailers like Walmart, Lowe's and Target.
They've designed the kitchen and the carryout to be efficient. Walker estimates that between 35 and 40% of business is off-premise dining. There will also be a large dining room and bar. He said that he'd rather have a smaller restaurant that is 85% full than a massive restaurant that's only 30% full.
Walker credits Emily Duvoisin, associate director of art and design for Mellow Mushroom, as the creative brain behind his store. The restaurant will have hand-painted murals outside and in, with a music theme.

With more than 110 employees in Walker's network, labor is a strength. Though they've hired managers for Mellow Mushroom, Walker said at his other two restaurants he and his wife act as owners and general managers. Though they'll be "very much involved" in the Danville Mellow Mushroom, they're excited to hire a managerial staff. Some current employees have mentioned they'd like to work at the pizzeria, and Walker said they'll probably bring over a few because those employees know how the Walkers operate and understand the expectations involved.
"I think that people will be drawn to Mellow because it's fun and exciting and new and fresh and clean. It's going to be a brand-new place," Walker explained. "Everyone who works in a restaurant likes to go work at the new, shiny thing. So, we want to try to capture some of Danville's best servers and get them on our team, treat them well, give them the hours that they want and put them in a position to make good money."
Walker said he doesn't have a lot of turnover in his operations because he and Meredith are approachable owners who treat their employees like family.
Walker added that closing the business loan through the Small Business Administration was his biggest challenge, and it took roughly four months.
"The SBA is very detailed. They want to know every single detail about everything you do, all your businesses, all your sales, everything, before they would approve the loan. They had to have the design, they had to have the kitchen equipment package, they needed the construction plans, every detail you could imagine," Walker explained. "I think the SBA just really likes to make sure all the Ts are crossed and the I's are dotted to make sure they're making a sound decision."
But without the SBA, Walker said, he wouldn't be where he is today — the SBA is built for people with visions and goals but lack the cash flow to make it happen.
He also credits Mellow Mushroom, adding that the teams with which he has worked have been brilliant and, it would seem, have set his franchise up for success.
"From the jump, dealing with head of franchising to going down there for the Discovery Day and meeting all the supply chain people, the art department, design team, building team, kitchen layout team, everybody has just been exceptional," Walker said. "They have been a very good support system, to the point where they, from the very jump, definitely made me feel like I was wanted. They wanted me in their business; they wanted me on the Mellow franchise team. And that felt good."
